A rare piece of French culinary history, this Circa 900 French XXXL Copper Hammered Mixing Bowl and Double Boilers with Iron Handle, Rolled Edge and Old Repairs is perfect for anyone who takes their cooking seriously.
The hammered copper design helps to distribute heat evenly while the iron handle provides easy manoeuvrability. The bowl features an impressive capacity (It's very large for a double boiler), making it ideal for mixing large batches. With its rolled edge and old repairs, this mixing bowl is not only functional but also a unique antique addition to any kitchen.
We purchased this bowl from a dealer in Normandy that had just done a restaurant/hotel clearance. Most of the things were stamped from Dehillerin. He said it was a very nice seaside restaurant and hotel along the coast but wouldn't tell us the name. Only this bowl and the copper Turbotiere (also for sale on Etsy) were not stamped but the dealer said both were from Dehillerin. This bowl would have been used in the restaurant to make large batches of the 5 French Mother sauces (Hollandaise, béchamel, velouté, espagnole, and sauce tomat) for brunch and evening service. It's also possible the pastry chef used it for chocolate and making jams and jelly. Seeing the repairs, it was certainly heavily used for quite a few decades.
